- Slow roasted Great Southern lamb rump in a Pinot Noir & Pepperberry sauce, with a parsnip crème
- Salad of Autumn leaves and herbs, lemon & thyme vinaigrette

- Lightly cured Tassie blue eye trevalla, roasted and served with salsa verde and buttered baby carrots
- Roasted local root veggies in an aromatic seasoning, served with truffled Bay of Fires cheddar bechamel
